Transferring Liquids Using a Siphon
When transferring beer or wine from one vessel to another you need to create a siphon. A siphon is based on the principle that a liquid will always seek to move to the lowest level. It uses the weight of the atmosphere and gravity to cause the liquid to move from a container placed above (higher) that the receiving container.
Racking is the term used to describe the transfer of a fermented beverage using a siphon with a minimal amount of agitation to the liquid. If you have never used a siphon it is a good idea to practice first. There are a few general rules which are very important. First is sanitation. The racking apparatus will be placed directly into the liquid and the entire interior will come in contact with the liquid. Second is agitation. The transfer must be made with as little aeration of the liquid as possible. Placing the container of liquid on the counter or table a day or two before racking will provide time for the sediment to settle down.

Racking canes are used when decanting liquids without distributing any sediment at the bottom of the primary vessel. The long straight end of the care is capped with a special tip designed to draw liquid from above the sediment. The fractions shown in the description indicate the inside diameter of the hose used with each cane. 24 x 5/16 inch cane fits 3, 5 and 6 gallon carboys, Better Bottles, and all pails. 30 x 5/16 inch cane is for barrels and demi-johns. 30 x 7/16 inch cane is faster transfers of large volumes |
