Concentrated smoke flavor to add hickory flavor without actually smoking.  Start with ½ teaspoon for 5 lbs of meat then adjust to suit your taste.
LEM CURE 4 oz. bag for 100 lbs. of meat $1.95
A mixture of salt and sodium nitrite (6.25%) used to control botulism and add color and flavor to smoked or cooked sausage.  The conditions created during the low temperature cooking of sausages and jerky are ideal for the promotion of botulism.  The use of this cure in meat and fish is strictly regulated by the FDA.  Follow directions to the letter.  DO NOT use more than a scant ¼ teaspoon per pound of meat.  Cure will not kill salmonella or E-coli bacteria.  Keep out of reach of children!
HOG CASINGS $8.95
Use for brats, fresh meat sausage, hot or sweet Italian sausage.  Natural casings offer consistent sizing, uniformity, minimized tangling, transparency and are tender, juicy and firm to the bite.  This 50 ft. package will stuff 25 to 30 pounds of sausage at 1-1/4 to 1-1/2" diameter.  Packed in salt and unopened package will keep for 6 months.  Refrigerate after opening.
