   Bacterial cultures are the key to cheese making and producing various other dairy products.  There is a large variety of cultures used in making cheese and other dairy products such as buttermilk and yogurt.  All of our starters are considered Direct Set or Direct Vat Inoculates (DVI) which take all the worry out of culture preparation.  They are added directly to milk when any recipe calls for starter.

    Contains: Lactococcus lactis subsp. lactis and cremoris 
    Mesophilic-A is for fresh and hard cheeses such as Cheddar, Colby, Feta, Chevre.  1/4 teaspoon will ripen 2 gallons of milk.  Add to milk when any recipe calls for the addition of starter.  Package contains eight 1/4 teaspoons, enough starter to prepare eight 2 gallon batches.  Store in freezer for up to 9 months. Requires Rennet

    Contains: Lactococcus lactis subsp. lactis, cremoris, biovar diacetylactis.
    Mesophilic-M is for fresh cheeses such as Camembert, Gouda, Blue, Baby Swiss and others where a buttery flavor and eye formation is desired.  1/4 teaspoon will ripen 2 gallons of milk.  Add to milk when any recipe calls for the addition of starter.  Package contains eight 1/4 teaspoons, enough starter to prepare eight 2 gallon batches.   Store in freezer for up to 9 months.     Contains: Lactobacillus helveticus, lactis
    For Italian cheeses like parmesan, romano, provolone and mozzarella.  1/4 teaspoon will ripen 2 gallons of milk. Must be used with Thermophilic Starter and requires Rennet according to recipe.  Package contains four 1/4 teaspoons, enough starter to prepare four 2 gallon batches.     Secondary Cheese Starters
    FROMAGE BLANC 5 packets $5.95
    One of the best yet!  A soft, creamy spreading cheese.  So simple even kids can make it.  One pack sets 1 gallon of milk and yields 2 LB. of cheese.  (contains rennet).
    CREME FRAICHE 5 packets $5.95
    Added to light cream this makes a delicious Crème Fraiche that may be served fresh or used in cooking.  Each pack will set up to one quart yielding about 1 LB.   When drained it will produce a creamy mascarpone. (contains rennet)
    BUTTERMILK STARTER 5 packets $5.95
    Makes thick old-fashioned buttermilk with skim or whole milk.  A superior buttermilk for drinking, cooking or buttermilk cheese.  Makes 5 quarts.
    SOUR CREAM 5 packets $5.95
    Each of the 5 packets will turn 1 quart of light cream or Half-n-Half  into delicious thick "old world" style sour cream.  Includes instructions.
    KEFIR CULTURE 2 packets $5.95
    Kefir has been called the "champagne of dairy products." Our kefir produces a rich creamy drink with a bubbly effervescence which may be sweetened with honey or maple syrup to produce a refreshing and nutritious dairy treat. May be re cultured.
    YOGURT CULTURE $5.95SEE YOGURT MAKING
    Makes 8 quarts using 1/8 teaspoon per quart. CONTAINS: Streptococcus thermophilus, Lactobacillus delbrueckii subsp. bulgaricus, Lactobacillus acidophilus, Bifidobacterium longum, Bifidobacterium infantis. 
    Cheese Making Rennet
    MARSCHALL RENNET TABLETS 10 tablets $5.95
    MARSCHALL RENNET TABLETS 100 tablets $39.95
    Marschall milk coagulant tablets are enzymatic preparations specially designed to be used in small volume cheese making to coagulate milk and to produce cheese of excellent quality.  Each tablet is uniform allowing tablets to be divided as needed for the most economical usage.  1/2 tablet will set 2 gallons of milk in approximately 45 minutes.  Each tablet is individual wrapped and will keep in the freezer for three years.
    Using a Tablet: Break the Marschall coagulant tablet into the size required to treat the amount of milk being used.  The tablet should then be dissolved at room temperature in 1/2 cup of distilled water mixed with 1 teaspoon of flaked salt.  Using the salt and breaking up the tablet will reduce the time required for the tablet to completely dissolve.
    LIQUID VEGETABLE RENNET 1 oz. dropper bottle $3.95
    LIQUID VEGETABLE RENNET LIQUID 1 pt. bottle $34.95
    Contains no animal products.  1/4 teaspoon diluted in one half cup of distilled water will set two gallons of milk in about 45 minutes.  You get 1 oz. in a spill proof dropper bottle or one pint (500ml) in an amber screw top bottle.
    Note: 1/4 teaspoon of double strength liquid rennet = 1/2 rennet tablet. Refrigerate up to 5 months.
