Pasta and Butternut Squash with Pancetta
  • 2-3 cups peeled and diced ½” butternut squash (1 small or ½ large squash)
  • 1 bunch broccoli rabe, kale or other bitter green, rinsed and roughly chopped
  • 2 Tbs. olive oil
  • coarse salt
  • 1 cup diced pancetta (4 oz..)
  • 1 cup diced onion
  • 2-3 large garlic cloves, minced
  • Crushed red pepper flakes
  • 2 Tbs. fresh sage, chopped
  • 1 lb. ziti pasta
  • Freshly grated Parmesan

  •    Preheat oven to 375 F.  Toss diced squash with 1 Tablespoon olive oil, spread on a baking sheet and roast in oven for 20-25 minutes or until starting to brown.
    While squash is roasting, blanch the chopped greens in boiling water for 5 minutes.  Drain.
       Add pasta to the boiling water and cook just shy of al dente, about 8 minutes.
    In the meantime, in a large skillet or sauté pan, heat 1 Tablespoon olive oil over medium heat.  Add pancetta, onion and garlic and sauté until onion is translucent, about 7-10 minutes.  Add red pepper flakes, blanched greens and chopped sage and mix in.
       Add 2 cups of the pasta cooking water and the cooked pasta to the skillet.  Continue cooking and stirring over medium high heat until the pasta has completed cooking and the liquid has reduced to a sauce consistency.
       Stir in the roasted squash and top with Parmesan or Romano cheese and serve.
       Yield:  6 – 8 servings
