Homebrewed Summer Refresher
Blackberry
Wheat Beer
Brew up a batch of summertime refreshment. This
easy to brew, quick recipe is a hit with homebrew connoisseur's as well
as those few people out there that think they don't like beer.
The compile recipe includes Coopers Wheat Beer, Oregon
Blackberry Puree, Brewer's Yeast, Priming Sugar, Bottle Caps and Instructions. |

1 Cooper's Wheat Beer Kit
46 oz. can Oregon Fruit Blackberry
Puree
|
Prepare the
Cooper's Wheat Beer according to kit instructions but topping off to just
4½ gallons in the primary fermenter.
After 1 week
add 1 46 oz. can of fruit puree to a sanitized carboy and rack the wheat
beer into it.
Allow 1 week
of additional fermentation before topping off to the bottom of the carboy
with distilled water.
After q week
place carboy into racking position at least 24 hours before bottling.
Bottle as usual. |

Carolina
Style Mustard Barbecue Sauce
(makes
2½ cups)
2 Tablespoons vegetable oil
2 garlic cloves, smashed
½ cup minced onions
1 cup American Yellow Mustard
¼ cup lemon juice
1 cup cider vinegar
½ cup beer or white wine
¼ cup dark brown sugar
1 teaspoon celery seeds
1 teaspoon salt
½ teaspoon cayenne pepper
½ teaspoon hot
sauce (to taste)
1 teaspoon Worcestershire
Heat the oil in a medium saucepan over medium low heat.
Place smashed garlic in pan and cook until it begins to brown. Remove
and discard the garlic. Add minced onions and cook until soft, about
5 minutes.
Add remaining ingredients and bring to a boil. Lower
the heat and simmer sauce for 15 minutes, stirring ccasionally. Remove
from heat.
This sauce is good on a pulled pork sandwich or used as
a marinade for pork chops or chicken before grilling. Use it as a
finishing sauce when barbecuing. |
