St. Patrick's & Easter Issue
Greek Easter Bread
Tsoureki is a Greek bread served at Easter.  Traditionally, it is formed into a braid and baked with red-dyed eggs nestled on top symbolizing Christ’s sacrifice.  Here, we've simplified it by baking it in a bread machine without the dyed eggs.  Using SAF Instant Bread Yeast eliminates the need to rehydrate the yeast.  The bread is delicious on its own and makes great French toast.  Yield:  1½ lb. loaf
  • ½ cup milk
  • 2 eggs, lightly beaten 
  • 6 Tablespoons soft butter
  • 1 teaspoon orange zest
  • 2 tablespoons orange juice
  • 5 tablespoons sugar
  • 3 cups bread flour
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 1/8 teaspoon ground allspice
  • 1½ teaspoons SAF yeast
  • 1 egg beaten with 1 Tbs. water
  • 1 Tablespoon sesame seeds
  •    Place first ten ingredients in the bread pan of a bread machine.  Add the dry yeast on top.  Place bread pan in machine and program your machine for sweet bread.  If your machine doesn't have a sweet bread setting, use the basic white cycle and set the crust for medium.
       Ten minutes before the bread is done, brush the top of the loaf with a mixture of 1 egg beaten with 1 tablespoon water.  Sprinkle top of loaf with sesame seeds and continue the baking cycle.
       When finished, turn pan upside down and shake the bread loose.  Cool on a rack for 20-30 min. before slicing.

      Neufchatel cheese is very similar in flavor to cream cheese but with 1/3 less fat and 25% fewer calories.  It is slightly softer in texture but can easily substitute for most recipes that call for cream cheese.  Neufchatel is just one of four soft cheese recipes in our Soft Cheese Kit which includes my recipe for Vegetable and Dill Cheese Spread pictured here.
